Quick Peanut Blossoms



I made these over the weekend. They are easy and quick, just like I like.

1 (18 oz.) roll Pillsbury Refrigerated Peanut Butter Cookie Dough
3 T. sugar
36 Kisses, unwrapped

Heat oven to 375. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets.
Bake at 375 for 10 to 12 minutes or until golden brown. Immediately top each cookie with 1 milk chocolate candy, pressing down firmly so cookie cracks around edge. Remove from cookie sheets. Cool completely before storing.

Kelli's New Car

Below is a picture of Kelli's new to her car. It is a 2003 Mazada 6. She hasn't stopped smiling all day! She is such a hard working young lady and her family is just so proud of her. She is going to school and working two part time jobs. Yeah for Kelli!!

Friday Chatter

Below is a picture of my dad and one of the many mushrooms he found. For some unknown reason these are called dry land fish and are found every spring in the woods. You cut them in half, roll them in corn meal and fry until brown. They are so-o-o good! Dad found 30 something on this trip but found 100 of these yesterday!



This one was the biggest he has every found. It was 6 inches long.

Grocery Shopping Update

I forgot to let you all know how switching my grocery day to Monday went. A complete flop!! For more reasons than not, shopping on Monday's just flopped so, I guess I am back to either Friday nights or Saturday afternoons.

Ok, on my soap box here. I went to Kroger's yesterday afternoon to get the sale items. All I had was 5 bags of sweet corn, a turkey, toilet paper and paper towel. I got in line behind a woman who not only spent $293.00 in groceries but who was talking to another lady while she was putting her groceries up to be checked out. Let's just say she was more interested in talking than checking out much to my frustration and those behind me. The cashier would actually have to stand and wait on her to put her groceries on the conveyer belt. I wanted to put the groceries up for her so bad I couldn't stand it. lol

The express line was lined up and the only reason I got behind her was I saw she was almost finished. She would have been if she hadn't kept stopping to talk!

The above is a great example of why I like going early in the morning. I am get in and get out quickly.

Chocolate Fudge Mousse

This is a new recipe. It was very easy, quick and cheap to make. It has a very smooth and creamy taste and is not rich at all. I am not much on pudding but I liked it anyway.



6 Servings

2 c. cold milk
1/4 c. hot fudge ice cream topping
3 c. cool whip
1 pkg. (3.9 oz.) instant chocolate pudding mix

In a bowl, whisk milk and pudding mix for two minutes. Stir in fudge topping. Fold in cool whip. Chill until serving.

Skillet Potatoes With Bacon & Cheddar

One of the many things that my sister and I have in common is the love for potatoes. I remember going through a notebook of recipes that she wanted to try one day that she had written down, and most of them was for a potato dish. It was like looking at my own notebook except my laptop now. I am in the process of getting all my recipes on my computer and get rid of some of all these notebooks and papers I have! Anyways, I found this recipe on Kraft Foods the other day.

Now, I made mine a little different, of course, so the recipe below is how I fixed mine. First of all the potatoes I used were some leftover baked potatoes I had from supper so, not wanting to waste them I just sliced them up and used them. I sliced mine a little thicker than the recipe called for since they were already cooked.



Then, I cooked 2 slices of bacon in a skillet until crisp and then crumbled it up.



I then placed them in the same skillet that I cooked my bacon in using the bacon drippings and just warmed them up (remember the potatoes were already done) and browned them a little.



Once they were warmed up, I sprinkled shredded cheddar cheese on them, my crumbled bacon and some chopped green onions. Put the lid back on until the cheese melted.



I had asked Eugene before I started this if he wanted any and he said, "no". Well, knowing him, I prepared enough for him anyway. When I finished cooking the potatoes he made a comment on something smelling really good. I took my skillet to him and showed him what I had been cooking, he then wanted some! He loved them and I sure did. Out of 5, I give this a 5+!
