1 lb. lean ground beef
1 lg. jar (16 oz.) picante sauce, mild or hot
2 cans (15 oz. each) refried beans
1 c. (8 oz.) sour cream
1/2 tsp. chili powder
1/2 c. chopped onion
Salt and pepper to taste
8 oz. Cheddar cheese, shredded
Jalapenos or mild chile, chopped to taste
Tortilla chips
Cook ground beef with onion; drain. Mix everything together in slow cooker or crockpot on low for about 3 to 4 hours. Serve with tortilla chips.

One-Dish Chicken Supper
Due to a different job 3 days a week, time is something I am even more short of than I was before, so I am trying to fix more crockpot meals. This recipe is very good. I gave it a 5 out of 5. It came from my Fix It & Forget It cookbook. Hope you enjoy!
4 servings
4 boneless, skinless chicken breasts halves
1 box Stove Top Stuffing
1 can cream of cream of chicken soup
1/3 c. milk
1 2/3 c. water
Place chicken in slowcooker. Combine soup and milk. Pour over chicken. Combine stuffing mix, seasoning packed and water. Spoon over chicken. Cover. Cook on low 6-9 hours.

Home-Style Beef Cubes
This recipe came from Fix-It and Forget It cookbook. I gave it a 5 out of 5. It was very easy, quick and yum, yum good.
(I have changed the ingredient amounts on some ingredients from the original recipe to suit my families taste).
Yield: 8-10 servings
1/2 c. flour
1/8 tsp. pepper
1/2 c. chopped green onions
2-14 1/2 oz. cans beef broth
1 tsp. Worcestershire Sauce
1/4 c. water
1 tsp. salt
2 lbs. beef cubes
Two 4-oz. cans sliced mushrooms, drained
3 T. flour
Combine the flour, salt and pepper. Toss beef in flour mixture to coat. Place in slow cooker.

Add onions and mushrooms to crockpot.

Combine broth and Worcestershire sauce. Pour into slow cooker. Mix well.

Cover. Cook on low for 7-12 hours.
One hour before serving, make a smooth paste of water and 3 T. flour. Stir into slow cooker. Cover and cook until broth thickens.
Serve over hot noodles.

Melt-In-Your-Mouth Pot Roast
Let me go ahead and get my judging of this recipe out of the way. I gave it a 1 out of 5. We ate it but I just didn't care for it. I have just come to the conclusion that I do not care for Dijon mustard. Plain and simple, just do not like it. If you like Dijon than this is the recipe for you. I got it from Taste of Home.
Servings: 6-8
1 lb. medium red potatoes, quartered
1/4 c. Dijon mustard
1 tsp. garlic salt
1/2 tsp. black pepper
1 1/2 c. beef broth
1 c. baby carrots
1 boneless chuck roast (3-4 lbs.)
2 tsp. dried rosemary, crushed
1/2 tsp. dried thyme
1/3 c. chopped onion
Place potatoes and carrots in a 5-quart slow cooker. Cut roast in half. In a small bowl, combine mustard, rosemary, garlic salt, thyme and pepper; rub over roast.
Place in slow cooker; top with onion and broth. Cover and cook on low for 6-8 hours or until meat and vegetables are tender.
Servings: 6-8

Pork and Cabbage Dinner
This was really, really good. I will be making it again!
2 lbs. pork steaks, chops or shoulder
3/4 c. chopped onion
1/4 c. chopped fresh parsley or 2 T. dried parsley
4 c. shredded cabbage
1 tsp. salt
1/8 tsp. black pepper
1/2 c. beef broth
Place pork in slow cooker. Layer onions, parsley and cabbage over pork.
Sprinkle salt and pepper over cabbage. Pour broth over cabbage.
Cover. Cook in crock pot on low for 5-6 hours.
Enjoy!

Easy Sunday Chicken Supper
4 servings
4 medium carrots, cut into 2-in. pieces
1 medium onion, chopped
1 celery rib, cut into 2-in. pieces
2 c. fresh green beans, (broken into 2-in. pieces)
5 small red potatoes, quartered
1 (3-3 1/2 lb.) chicken, cut up
1 1/2 c. hot water
1 tsp. salt
1/2 tsp. dried basil
2 tsp. chicken bouillon granules
1/2 tsp. dried thyme
Pinch black pepper
In a crock pot, layer the first 6 ingredients in order listed.
In a bowl, combine the remaining ingredients; pour over the top. Do not stir. Cover and cook on low for 6-8 hours or until vegetables are tender and chicken juices run clear.
Remove chicken and vegetables. Thicken juices for gravy if desired.

Hot Fudge Cake
It seems the only time I can find here lately to post is on my lunch break. Oh well, whatever works!
I fixed this in the crock pot one day last week. I just love my crock pot. Hey, that needs to be on my "Favorites Friday" doesn't it? I really like fixing desserts in my crock pot especially in the winter time. This was good and fudgy and them add the cold ice cream. Yum! Yum!
Recipe from Fix It and Forget It Cookbook.
1 c. packed brown sugar
3 T cocoa powder
1/2 tsp. salt
2 T. melted butter
3/4 c. packed brown sugar
1 3/4 c. boiling water
1 c. flour
2 tsp. baking powder
1/2 c. milk
1/2 tsp. vanilla
1/4 c. unsweetened cocoa powder
Vanilla ice cream
Mix together the 1 c. brown sugar, flour and 3 T. cocoa powder, baking powder and salt. Stir in milk, butter and vanilla.
Spread over the bottom of a slow cooker. Mix together 3/4 c. packed brown sugar and 1/4 c. cocoa. Sprinkle over mixture in slow cooker. Pour in boiling water. Do not stir.
Cover and cook on high for 2-3 hours or until a toothpick inserted comes out clean. Serve warm with ice cream. Yum!

Cherry Delight
This is what the Cherry Delight looks like when it is ready to eat!

I made this Monday night and it was very good! Of course, I always add more nuts then what the recipe calls for because I love nuts. My husband loved this but my daughter doesn't like cherries. Can you imagine that! I want to try this again but use apple pie filling the next time.
21 oz. can cherry pie filling
1/2 c. butter, melted
1 pkg. yellow cake mix
1/3 c. nuts, optional
Place pie filling in a greased slow cooker. Combine dry cake mix and butter (mixture will be crumbly). Sprinkle over filling. Sprinkle nuts over the cake mix.
Cover and cook on low for 4 hours or on high for 2 hours. Allow to cool, then serve in bowls with dips of ice cream.

Savory Pork Pot Roast
This recipe came from Cheap, Fast and Good. It tasted better the next day as leftovers. I was leary of using orange and apple juice but my family really liked the pork roast fixed this way. (Sorry mom, there was no left overs.)
1 boneless pork roast (3-3 1/2 lbs)
2 medium ribs of celery
1 c. orange juice
1/2 c. apple juice
Juice of 1 lime
1 T. minced, bottled garlic
4 medium sized potatoes
2 medium onions
3 medium carrots or 12 baby carrots
1/4 c. ketchup
2 T. Worcestershire Sauce
1 tsp. salt
Place roast in crock pot. Peel and quarter the potatoes and add them, making sure they are at the bottom of the pot. Peel the onions and cut them in 1/2 inch thick pieces, place in pot. Cut the celery and carrots into 1 inch long pices and add to pot (if using baby carrots just place them in pot.)
In a 1-quart container or glass measuring bowl, whisk together the orange, lime and apple juice, ketchup, Worcestershire Sauce, garlic and salt. Pour the mixture over the meat and vegetables. Cover the slow cooker and cook on low for 8 to 10 hours or until the meat and vegetables are tender.

A Chicken In Every Pot
I got this recipe from Cheap Cooking Cookbook. Some friends of mine gave me this cookbook and I have gotten so many good recipes from it. The recipe calls for celery but I did not put any in. One because I didn't have any and second, I like raw celery but I do not care for it cooked.


Sorry, but I forgot to take a picture once it was finished. We really liked this recipe. It was quick and very easy.
3 medium size carrots
2 medium size ribs of celery
2 large onions
4 medium size potatoes
2 tsp. seasoning salt
1/2 c. water or chicken broth
1 whole chicken (about 3 1/2 lbs.) defrosted and cut up
Peel the carrots and cut them into 1-in pieces. Place the carrots in the bottom of crock pot. Cut the celery into 1 inch pieces and add them to the cooker. Peel the onions and potatoes, quarter them, and add them to the pot. Sprinkel 1 tsp. of the seasoning salt evenly over the vegetables. Add chicken pieces to the crock pot. Sprinkle the remaining 1 tsp. of seasoning salt evenly over the chicken. Pour 1/2 c. water into the pot alonside the chicken (taking care not to pour it over the chicken) and cover the pot.
Cook in crock pot for 10 hours or until chicken registers 180 on an instant-read thermometer in the thigh portion.

Slow Cooking Thursday

I found this recipe in "Fix-It and Forget It" cookbook. We liked this but none of us were crazy about it.
When and if I make it again, I will add more sugar the next time. The apples were a little tart still. I only used 4 apples and 1/2 tsp. nutmeg. I also had to use my hand to get the final sugar mixed in with the butter and peanut butter. My fork just wasn't doing the trick so I gave up and used my hands and it blended together quicker. I only cooked mine for the 5 hours. Any longer and my apples would have been cooked to much. But, hey, it was a quick, tasty, and warm dessert for a cold winter day!
APPLE PEANUT CRUMBLE
4-5 cooking apples, peeled and sliced
2/3 c. packed brown sugar
1/2 c. flour
1/2 c. quick-cooking dry oats
1/2 tsp. cinnamon
1/4 - 1/2 tsp. nutmeg
1/3 c. butter, softened
2 Tbsp. peanut butter
Ice cream
Place apple slices in slow cooker. Combine brown sugar, flour, oats, cinnamon and nutgmet. Cut in butter and peanut butter. Sprinkle over apples. Cover cooker and cook on low for 5-6 hours. Serve warm or cold with ice cream.

Cabbage Kielbasa Supper

Altough it has been a long time since I have been able to participate in Slow Cooking Thursday, I always visit Sandra's Blog each week and all the great crock pot recipes.
Although I am not a fan of Kielbasa Sausage, my husband loves this so I fix it for him and him alone!
8 c. coarsely shredded cabbage
1 medium onion, chopped
1/4 tsp. black pepper
1 lb. Kielbasa or Polish sausage, cut into serving size pieces
3 medium potatoes, cut into 1/2 in. cubes
1 3/4 tsp. salt
1 can (14 1/2 oz.) chicken broth
In a slow cooker, combine the cabbage, potatoes, onion, salt and pepper. Pour broth over all. Place sausage on top (slow cooker will be full, but cabbage will cook down.) Cover and cook on low for 8-9 hours or until vegetables are tender and sausage is heated through.
