I have become really, really bad at posting here the last few months. I have just been so busy that by the time I get home from work I am just to tired to think about posting anything.

Oven Fried Chicken
I saw this recipe on Food Network on the show "Sandra's Money Saving Meals".
Good things about this recipe - quick, easy, very moist.
Not so good things - there wasn't much flavor to the coating mix. If I made this again I would add some herbs and spices or more hot sauce one.
(I had to turn my oven up (I was in a hurry) because after 30 minutes at 350 my chicken was not done.)
1 chicken cut up
1 c. buttermilk
1 T. hot sauce
Panko crumbs
Mix buttermilk and hot sauce together (the 1 T. of hot sauce does not make it hot so if you like more kick to it you may want to add more.) Dip chicken pieces into the buttermilk mixture and then into the panko crumbs. Place on a cookie sheet that has been sprayed with cooking spray. Bake at 350 for 30 minutes or until done.

Pork and Cabbage Dinner
This was really, really good. I will be making it again!
2 lbs. pork steaks, chops or shoulder
3/4 c. chopped onion
1/4 c. chopped fresh parsley or 2 T. dried parsley
4 c. shredded cabbage
1 tsp. salt
1/8 tsp. black pepper
1/2 c. beef broth
Place pork in slow cooker. Layer onions, parsley and cabbage over pork.
Sprinkle salt and pepper over cabbage. Pour broth over cabbage.
Cover. Cook in crock pot on low for 5-6 hours.
Enjoy!

No Electric!
That's right. No electricty. I am at work posting this.
I came to work without a bath and dirty hair. Yuck!! I washed off with baby wipes this morning. Better than nothing huh? We had some pretty rough storms in our area last night but my family and I are very thankful to the Lord that besides yards full of leaves, limbs and trees we were not hurt and we still have our homes.
My dad called the electric company and they have around 800 without electric as of this morning and do not know when we will get service again. So....going after work today to get ice for coolers and lots of garbage bags and clean out my fridge. (I just can't stand the thought of throwing away food!!) Hopefully with the generator that my father has borrowed, we will be able to keep all of our garden stuff in our deep freezers.
