Recipe Flop!

I made Ham and Swiss Stromboli tonight for supper. It smelled so good cooking. My husband came in from work and said, "Boy that sure smells good and looks good also." Then it went down hill from there. I only added 3 green onions instead of the 6 that it called for and boy am I glad. WE thought the three onions was too many. I didn't have shredded swiss cheese so I weighed 6 oz. of sliced swiss cheese and just tore it up in small pieces. Here goes the recipe if you want it.

1 tube (11 oz.) refrigerated French Bread
6 green onions, sliced
6 oz. thinly sliced deli ham
8 bacon strips, cooked and crumbled
1 1/2 c. (6 oz.) shredded swiss cheese

Unroll dough on a greased baking sheet. Place ham over dough to within 1/2 inch of edges; sprinkle evenly with onions, bacon and cheese. Roll up jelly-roll style, starting with a long side. Pinch seams to seal and tuck ends under. Place seam side down on a baking sheet.
With a sharp knife, cut several 1/4 inch deep slits on top of loaf. Bake at 350 for 26-30 minutes or until golden brown. Cool slightly before slicing. Serve warm.

Yield: 6-8 Servings

I cannot believe that I forgot to take a picture of the sandwich before I started slicing it up. The dough bakes up very pretty but none the less, below is the finished project.



I can never remember cooking something that my husband refused to eat but this is one recipe that he said he just couldn't eat and I didn't like it either. I had to fix something else for supper. Hope you enjoy it more!

Beef and Cheese Quesadillas

This was pretty good. I fixed it one day last week for supper. I can describe it in 3words,quick, easy and cheap.
The tomatoes and green onions can be chopped, lettuce shredded and hamburger mix prepared ahead of time so you only have to assemble the Quesadillas when it comes meal time.



Cooking Spray
2 lb. hamburger
2 large tomatoes, chopped
2 c. salsa
8 large flour tortillas
1/2 head lettuce, shredded
Green Onions, chopped
2 pkgs. Taco Seasoning Mix
Sour Cream
Refried Beans
Shredded Cheddar cheese

Brown hamburger, drain. Add taco mix and cook according to package directions.
Spray skillet with cooking spray. Add 1/4 c. of hamburger mix to each tortilla, sprinkle desired amount of cheese over filling. Fold the tortilla in half over the meat mixture, pressing it lightly. Cook on each side over medium heat until tortilla is browned.
Using a pizza cutter, cut each quesadilla into 3 wedges. Serve at once topping each with tomatoes, salsa, lettuce and sour cream.

Kim's Salmon Patties



A lady from our church gave me this recipe for Salmon Patties. We all love salmon patties except for my ddl. My husband likes these patties better than the ones I had been making. I was a little leary of putting buttermilk in these but you would never know it. They are very good.

1 can salmon or 2 foil pouches
1/3 c. cornmeal mix
2 T. self rising flour
Oil for frying
1 egg
1/2 c. buttermilk
1/8 tsp. garlic salt

Drain salmon and discard liquid. Remove skin and bones and flake salmon with a fork. Stir in egg, cornmeal, buttermilk, flour and garlic salt. Mix well. (Batter will be wet.)
Heat oil in skillet. Drop salmon mixture by spoonfuls into hot skillet and slightly flatten each patty. Brown on both sides. Remove to paper towels to drain.

Help Wanted!!



Have you ever just wanted to tape a sign like this to your front door or window like they do in businesses when you become so overwhelmed with housework? Well I am there today! I have dishes in my sink to wash and by the way, have I mentioned how I hate coming home from work with dirty dishes in my sink? No matter how few they may be, I like to start my supper with a clean slate so to speak.

I am also behind in my laundry which is something I rarely ever do. I have maybe 3 loads at the most but for me that is a lot because I always do laundry every day. I like to hang my clothes on the clothes line if I can and save electric so, the sunshine has arrived so clothesline here I come!

My floors need swept and my rugs need to be shook, need I bore you with more? I don't think so. I have got to get with it! I have a doctor's appointment this afternoon. Since I am the last appointment I am hoping to get out quickly, get home, cook supper, and start on all my house work.

HAPPY ANNIVERSARY TO US!


Today is our 26th wedding anniversary! We will have to wait until this weekend to celebrate since we are both busy until then. We always celebrate by going out to a restaurant that we do not normally go to. Exciting isn't it?
I will have to post some pictures later on this week when I can find a moment of time. Anymore that seems so hard to do!

Frogs



I love frogs and my favorite color is lime green. I found this clip art from a Cosmi DVD I had and just couldn't resist adding it to my blog.

I am supposed to be cleaning house today. I started out cleaning when I first got up this morning and then got myself ready and went with Kelli to Wal Mart to get her another cell phone. Someone was so kind and stole hers while she was at work yesterday.
When I got back I decided to make us a baked potato and salad for dinner. Then I cooked fried chicken, mashed potatoes, green beans, maccaroni and cheese, cole slaw and biscuits for supper. Never mind the banana bread and brownies I wanted to make today. My days off are just never long enough!

Cherry Delight

This is what the Cherry Delight looks like when it is ready to eat!



I made this Monday night and it was very good! Of course, I always add more nuts then what the recipe calls for because I love nuts. My husband loved this but my daughter doesn't like cherries. Can you imagine that! I want to try this again but use apple pie filling the next time.

21 oz. can cherry pie filling
1/2 c. butter, melted
1 pkg. yellow cake mix
1/3 c. nuts, optional

Place pie filling in a greased slow cooker. Combine dry cake mix and butter (mixture will be crumbly). Sprinkle over filling. Sprinkle nuts over the cake mix.
Cover and cook on low for 4 hours or on high for 2 hours. Allow to cool, then serve in bowls with dips of ice cream.
