I apologize for the long delay in posting. I felt so bad last week that it was all I could do just to work and do my house work, which I didn't do well at all. Hopefully I can get back in the swing of things this week.
I have new recipes from last week that I did not get to try and a couple that I want to try this week so I had better get on the ball so I can share with everyone!
Not much going on on my hill. I had a great weekend just spending time with my family. We tried a new restaurant that has just opened in our area this weekend. We both had a steak (which is my favorite) and it was the best I have eaten in a long time. We will definitely be going back. Hubby got a steak also (although he really does not care for steak) and loved it! That's how good it was.
Bubby and his wife came and ate lunch with us yesterday. It is always so good to see them both. We are making plans to celebrate bubby's birthday with him next month. Lord's will we will be going out of town one day next month to celebrate together. I am really looking forward to the trip. I cannot believe that he will be turning 25!! That just doesn't seem real! My how time has flown by.
I had better get off and stop reminising and try and get my day started. Hopefully I will talk to everyone again later on today.

Monday Chatter
How was everyone's weekend? I have had a great one. I went shopping on Saturday and just took my time and looked. I went to Hobby Lobby and found some great deals. That is always a good thing. I could just look around in that store forever.
I also went to my sisters this weekend. Oh if I could just get brave enough to post a picture on here of her. It is so tempting!! She looked at my camera with her tongue stuck out and her eyes crossed. Such a lovely picture!! lol I am not that brave though. I fear the pay back.
Went to church on Sunday and took a nap before the evening service. Got home from church that evening and Riley was sick and seems to still be sick this morning. He got stung on the foot yesterday so I am wondering if maybe it was from that because he was fine until that happened.
It so so hot and humid here today and expecting a small chance of rain but nontheless, I have hung my laundry out today.
I have three strips of my afghan put together. I would have had it finished but smart me crocheted the fourth strip with the colors in the wrong order so I have to recrochet that strip.
Instead of the boy afghan, I have decided to make the same pattern but for a lady in our church who is expecting next month. She is having a girl but doesn't want pink so I am going to do it in a soft green. I will post pictures as it progresses.
Off to finish cleaning my house and hanging laundry out. Have a great Monday!

One of my Favorite Crafts

Crocheting! My grandmother Lovell taught me how to crochet when I was about 13 and I have enjoyed crocheting ever since.
I enjoy making afghans most of all. The above afghan is one I have worked on for a while. It is a very easy pattern and I can pick it up and put it down as much as I need to without having to follow a step by step pattern. Hopefully I will be able to finish sewing this together this weekend.
I have found a baby boy afghan I am going to make next I think. More on that later.

Deep Fried Potato Wedges
(Edited: I added a little bit more milk than the directions on the box said to. I wanted my batter a tad more thinner.)

My mother found this flour years ago and got me started on it also. I had not made any of these potatoes in forever and thought I would make some again for supper last night. I fixed fried chicken, potato wedges, cole slaw, baked beans and rolls. It was all good except as you know, I do not like baked beans so I left those for my husband.

The flour is more expensive then buying a 5 lb. bag of say White Lily. The flour cost $1.32 at Wal Mart for 10 oz. You can just follow the directions on the box and either bake or deep fry. Although, I did not follow the directions completely. I added the amount of milk I wanted to to get the consistency that I wanted. It's all about me you know! lol

White Lily Biscuits
Hubby and Sissy will eat homemade or canned biscuits. I do not like canned biscuits at all but I will fix them occasionally for them. When I want to eat biscuits, I always fix them using the recipe below. This recipe came from White Lily Flour.
First of all, measure 2 c. self-rising flour in a bowl. Cut in 1/4 c. shortening. (I use a pastry blender.)

Blend in 3/4 c. + 1 T. buttermilk and stir until dough leaves the sides of the bowl.

Knead gently 2 or 3 times on a lightly floured surface. Roll dough about 1/2 inch thick. Cut without twisting cutter.

Place in pan with sides touching. Bake for 8 to 10 minutes.

I usually melt about 1/2 to 1 T. butter and brush the tops with butter as soon as they come out of the oven.

Looks like it will be very hot here in Kentucky today and muggy! At least I will be able to hang my laundry on the clothes line to dry.
Monday's is the day I get to clean my house, do laundry, and hopefully finish my afghan I am working on. I have been so lazy lately and have not finished it. All I like is sewing the strips together. It's not like that is so hard but I have just been draggy here lately for some reason.
Not much going on here on my hill here lately. I haven't even been trying new recipes! What's wrong with me? I need to straighten up! lol
I think I will make me some sausage and biscuits for breakfast this morning. I will be back sometime today and post my biscuit recipe.

Baked Beans
I received this recipe from my assistant supervisor years ago when I worked at a hospital. Everyone always says how good these beans are but I do not like baked beans so I do not think I will comment on this one. lol
1-3 lb. can pork & beans
1/2 c. ketchup
4 slices uncooked bacon strips
1/4 c. chopped onion
1 2/3 c. brown sugar
Squirt of mustard
Combine beans, ketchup, onion, brown sugar and mustard in a bowl and stir well. Pour into a 13x9x2 baking pan. Place bacon strips on top of beans. Bake at 350 for 1 1/2 hours.
