Basic Meat Loaf

This is another Paul Deen recipe. I made this for supper last night and it was yummy!

Serves 4

1 lb. hamburger
1/4 tsp. black pepper
1/2 c. chopped bell pepper
8 oz. diced tomatoes, with juice
1 1/4 tsp. salt
1/2 c. chopped onion
1 egg, lightly beaten
1/2 c. quick-cooking oats (I usually add more)



Preheat oven to 375. Mix all ingredients well.



Place in a baking dish and add topping.

TOPPING:

1/3 c. ketchup
1 T. yellow mustard
2 T. brown mustard
Mix well and spread on meatloaf.



Bake for 1 hour.

What a Beautiful Morning!

This morning as I was waking up to the sound of my irratating alarm clock, I thought to myself that If I look hard enough I might just find in my Bible reading this morning where it is a sin to wake up on a rainy and stormy morning. The thunder was rumbling and the rain hitting my tin roof was just calling for me to stay in bed. I do my best sleeping when I hear the rain and thunder. But, sad to say that I did not find a scripture to excuse me this morning from getting up so, here I am.

I go to look out my back door and everything just seems so green and perky this morning. I find myself just standing there enjoying all the beauty the Lord has blessed me with. Like all the green trees and bright sky.



Then as I am looking around I notice two different white patches in my back yard. Well, despite the rain my camera is calling. Never mind I am still in my pajamas, I grab my camera and my umbrella and head out. Ya know, I can honestly say I have never been tempted to go outside in the rain to take pictures but, here I go and, this is what I find. A big white mushroom.



And right beside it, these strange looking mushrooms.



Ok, my back is getting wet. Holding an umbrella and taking pictures at the same time is more than my two hands can handle so I get myself back to the house. But wait, how can I resist these beautiful flowers by my steps. Aren't these so pretty with the rain drops on them?



Then, I can't forget my chives that seem to be doing so well this year. Yum! I just love fresh chives. As a matter of fact, they tasted real well with my egg omelet this morning.

This and That

I am moving slow this morning. We are having VBS at church this week and after working all day and then working VBS at night, my health really gets me down fast. Faster than I would like.

I sure wish I had a stronger heart so I wouldn't tire so darn easy! It is just so frustrating!! My heart rate is not very good this morning, despite already having my medication, my chest feels like a concrete truck is sitting on it and I just can't seem to get enough oxygen in this morning. With the Lord's help though I will make it through I am sure. Ok, time to quit whinning and move on.



This is a Lily plant that my son and his wife gave me for mother's day. Isn't it just beautiful? I love the deep red.



I just love this rose bush in my front yard. My husband has wanted to cut it down several times but I have talked him out of it everytime. (One day my luck will run out I am sure!) How could you cut something down that has such beautiful blooms? Just because the thorns stick him everytime he mowes around it just doesn't seem like a good excuse to me!! lol Besides, my mnl always loved this rose bush and I just can't get rid of it. Everytime I look at the beautiful blooms I think of her and how she always committed on the beautiful dark pink blooms. She has gone to heaven now and we all miss her very much!!

I guess I need to get off,cook my breakfast and start my day. I hope everyone has a great Wednesday!

Strawberry and Cream Pie



This is a Paula Deen recipe and I goofed it up big time. I guess I didn't beat my butter, sugar and eggs long enough because when I cut into my pie it was watery. It still tasted good though. So, make sure you beat it until fluffy.

1 stick butter
1 1/2 c. powdered sugar
2 eggs, beaten
1 (8 in.) graham cracker crust

Topping:
1 c. whipped cream
1/2 c. sugar
1 1/2 c. sliced and sweetened strawberries, drained
Whole strawberries, for garnish
Mint leaves, for garnish

With an electric mixer, cream together butter, and powdered sugar, add eggs. Beat ingredients until fluffy. Spread over crust. Chill.

Meanwhile, mix whipped cream with 1/4 c. sugar. Toss strawberries with 1/4 c. sugar. Spread half the whipped cream over pie, then add the strawberries. Top with remaining whipped cream. Chill for at least 8 hours. Garnish with whole berries and mint leaves.

Apple Fried Pies

Yum! This is a Paula Deen recipe and boy was it good! My hubby liked it and just as I was taking these out of the fryer my snl came by and ate one also. She loved it to, so I would say this recipe is a keeper!

2 T. butter
4 McIntosh apples, peeled, cored and sliced
1/2 c. sugar
1/2 tsp. cinnamon
1 tsp. lemon juice
1 (8 piece) container refrigerated flaky biscuit dough

For the filling: add the butter to a large saute pan and melt. Add the apples, sugar, cinnamon, and lemon juice and cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat and cool.



When the filling is cool, roll the biscuits out on a lightly floured surface so that each biscuit forms a 7 to 8-inch circle. Place 2 to 3 T. of the filling on 1/2 of each circle.



Brush the edges of the circle with water. Fold the circle over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork.



Heat a deep fryer or a deep pot halfway filled with oil to 350.

Carefully add the pies to the oil, 1 at a time, and fry until golden brown, turning the pies as necessary for even browning, about 5 to 8 minutes. Drain on paper towels. Sprinkle with powdered sugar immediately.

Monday Chatter

I apologize for the long delay in posting. I felt so bad last week that it was all I could do just to work and do my house work, which I didn't do well at all. Hopefully I can get back in the swing of things this week.

I have new recipes from last week that I did not get to try and a couple that I want to try this week so I had better get on the ball so I can share with everyone!

Not much going on on my hill. I had a great weekend just spending time with my family. We tried a new restaurant that has just opened in our area this weekend. We both had a steak (which is my favorite) and it was the best I have eaten in a long time. We will definitely be going back. Hubby got a steak also (although he really does not care for steak) and loved it! That's how good it was.

Bubby and his wife came and ate lunch with us yesterday. It is always so good to see them both. We are making plans to celebrate bubby's birthday with him next month. Lord's will we will be going out of town one day next month to celebrate together. I am really looking forward to the trip. I cannot believe that he will be turning 25!! That just doesn't seem real! My how time has flown by.

I had better get off and stop reminising and try and get my day started. Hopefully I will talk to everyone again later on today.

Monday Chatter

How was everyone's weekend? I have had a great one. I went shopping on Saturday and just took my time and looked. I went to Hobby Lobby and found some great deals. That is always a good thing. I could just look around in that store forever.

I also went to my sisters this weekend. Oh if I could just get brave enough to post a picture on here of her. It is so tempting!! She looked at my camera with her tongue stuck out and her eyes crossed. Such a lovely picture!! lol I am not that brave though. I fear the pay back.

Went to church on Sunday and took a nap before the evening service. Got home from church that evening and Riley was sick and seems to still be sick this morning. He got stung on the foot yesterday so I am wondering if maybe it was from that because he was fine until that happened.

It so so hot and humid here today and expecting a small chance of rain but nontheless, I have hung my laundry out today.

I have three strips of my afghan put together. I would have had it finished but smart me crocheted the fourth strip with the colors in the wrong order so I have to recrochet that strip.

Instead of the boy afghan, I have decided to make the same pattern but for a lady in our church who is expecting next month. She is having a girl but doesn't want pink so I am going to do it in a soft green. I will post pictures as it progresses.

Off to finish cleaning my house and hanging laundry out. Have a great Monday!

One of my Favorite Crafts



Crocheting! My grandmother Lovell taught me how to crochet when I was about 13 and I have enjoyed crocheting ever since.

I enjoy making afghans most of all. The above afghan is one I have worked on for a while. It is a very easy pattern and I can pick it up and put it down as much as I need to without having to follow a step by step pattern. Hopefully I will be able to finish sewing this together this weekend.

I have found a baby boy afghan I am going to make next I think. More on that later.

Deep Fried Potato Wedges

(Edited: I added a little bit more milk than the directions on the box said to. I wanted my batter a tad more thinner.)

My mother found this flour years ago and got me started on it also. I had not made any of these potatoes in forever and thought I would make some again for supper last night. I fixed fried chicken, potato wedges, cole slaw, baked beans and rolls. It was all good except as you know, I do not like baked beans so I left those for my husband.



The flour is more expensive then buying a 5 lb. bag of say White Lily. The flour cost $1.32 at Wal Mart for 10 oz. You can just follow the directions on the box and either bake or deep fry. Although, I did not follow the directions completely. I added the amount of milk I wanted to to get the consistency that I wanted. It's all about me you know! lol

White Lily Biscuits

Hubby and Sissy will eat homemade or canned biscuits. I do not like canned biscuits at all but I will fix them occasionally for them. When I want to eat biscuits, I always fix them using the recipe below. This recipe came from White Lily Flour.

First of all, measure 2 c. self-rising flour in a bowl. Cut in 1/4 c. shortening. (I use a pastry blender.)



Blend in 3/4 c. + 1 T. buttermilk and stir until dough leaves the sides of the bowl.



Knead gently 2 or 3 times on a lightly floured surface. Roll dough about 1/2 inch thick. Cut without twisting cutter.



Place in pan with sides touching. Bake for 8 to 10 minutes.



I usually melt about 1/2 to 1 T. butter and brush the tops with butter as soon as they come out of the oven.

Good Morning!

Looks like it will be very hot here in Kentucky today and muggy! At least I will be able to hang my laundry on the clothes line to dry.

Monday's is the day I get to clean my house, do laundry, and hopefully finish my afghan I am working on. I have been so lazy lately and have not finished it. All I like is sewing the strips together. It's not like that is so hard but I have just been draggy here lately for some reason.

Not much going on here on my hill here lately. I haven't even been trying new recipes! What's wrong with me? I need to straighten up! lol

I think I will make me some sausage and biscuits for breakfast this morning. I will be back sometime today and post my biscuit recipe.
