Barbecued Beef on a Bun

This is another recipe from "Cheap Cooking". Although this recipe called for beef I used pork since that was what was on sale last week and we all enjoyed it. I cooked my pork in a crockpot Saturday night for 10 hours. The next morning when it was finished cooking, I removed the pork, shredded it and placed it in a pot. I rewarmed the shredded pork when I got back from church with the barbecue sauce. I served baked potato wedges and cole slaw with it.

4 servings

4 hamburger buns
2 c. shredded cooked beef roast
1 c. barbecue sauce

Split the buns and lightly toast them in a toaster oven. Set aside. Place the beef and the barbecue sauce in a small saucepan and place it over medium heat. Stir well and cook until the beef is heated through, 3 to 4 minutes. Spoon the barbecue beef on the buns. Serve immediately.

  1. This also works well with chicken (use thighs, breast or combo of both). Yum!
